In November of 2011, we retired the Alhambra’s traditional dinner buffet and, with the leadership of Executive Chef DeJuan Roy, switched to plated, full-service seating at your table. Creating the Alhambra’s unique dining experience, Chef DeJuan leads our in-house culinary team as he creates a new culinary adventure for each show tapping into the show’s unique story and theme. So each time you visit the Alhambra for a new production, you’ll also enjoy an entirely new menu!
Chef DeJuan was most recently the Executive Chef at 95 Cordova in St. Augustine, FL. Prior to that, he served as Executive Chef of The Plantation Room at the Celebration Hotel in Celebration, FL. A graduate of the Cooking and Hospitality Institute of Chicago, Chef DeJuan has more than 20 years of culinary experience. He has lived in Jacksonville for 15 years.
